Homemade Potato Bread

Mmmm. There's nothing better than the fresh smell of bread baking in the oven, or the cathartic feeling of kneading dough on the counter, your hands covered in flour.

Having not baked lately, I spent last night filling my apartment with the warm, buttery smell of my favorite potato bread. Here's the recipe for you!

{potato bread}

2 1/2 tsp dry active yeast
1/4 cup warm water
1 tbsp sugar

In small bowl, mix the yeast, sugar and warm water until dissolved.

4 cups all-purpose flour
1/4 cup instant potato flakes
1/4 cup dry milk powder
2 tsp salt
1/4 cup sugar
2 tbsp margarine
1 cup warm water

In a large bowl, mix the flour, sugar, potato flakes, milk, butter, water and yeast mixture until you can knead it together into a dough-like consistency. Add more water if it's too dry, or more flour if too wet.

 Spray a bread pan with cooking spray and place dough in it. Put a towel over the top and let rise.

When bread has risen over the top of the pan, place in a preheated oven 300-325 degrees for 30 minutes. Butter the top of the crust and let cool! (Try not to eat it all at once!)
